This simple, step-by-step recipe is so easy so let’s get started.
Here is what you’ll need:
- 1 English muffin, toasted
- 1 large egg (to be scrambled)
- 2 tablespoons cheddar cheese, grated
- 1 teaspoon butter
- Salt and pepper
- 1 strip cooked bacon, crumbled (optional)
- 1 tablespoon red onion, minced (optional)
Step 1) Make sure your coffee mug is clean & microwave friendly. Coat the inside of your mug with some butter…this will help slide the egg right out once it’s done.
Step 2) Whisk your egg in the mug and add the salt and pepper (if desired). And microwave on high for 30-35 seconds. **Note: if you cook any longer than that, it will be like rubber. Trust me. 🙂
Step 3) THEN add you cheese. It’s important to cook the egg alone THEN add the cheese so as to not overcook the cheese. Once cheese is added, put back in microwave for an additional 10-15 seconds.
It should look like this – all yummy and gooey!
Step 4) Scoop your egg creation onto an English Muffin and you’re ready to go!
For a Bacon / Onion Alternative – do this!
Add (1) strip of bacon with a small portion of chopped onion to the egg mix – then microwave. **Note: add about 5 seconds to your cooking time. Then add your cheese and cook on!
