Skinny, Spicy Pimento Cheese Is No Mayo, No Guilt

Love pimento cheese, but hate the calories?  This skinny, spicy pimento cheese recipe lets you enjoy a low-cal, kicked up version of this Southern classic.

If you live in the South, you know that Pimento Cheese is our version of cheese and crackers.  It’s a go-to snack and most Southern households have a recipe or store-brand that they swear by.  However, it’s typically made with mayonnaise and cream cheese, which makes it not-so-friendly on the waistline.

 

 

Trial and Eater to the rescue with a version of Pimento Cheese that cuts back the fat by using greek yogurt.  It still has the creaminess of mayo, but a fraction of the calories.  If you miss the cream cheese, try adding a low or no fat version.  To boost the flavor, she adds in jalapenos, making we spice-lovers extra happy!  Give this a try…it may end up being a new favorite!

 

Here’s your ingredient list for Skinny, Spicy Pimento Cheese:

  • 1 cup plain greek yogurt
  • 1 jalapeno (can use pickled jalapeno slices also or instead, increase or decrease amount depending on desired spiciness, diced)
  • 2 oz jar diced pimento
  • 8 oz sharp cheddar cheese , shredded
  • 4 oz monterey jack cheese , shredded
  • dash of cayenne pepper
