Boozy Red, White And Blueberry Cheesecake flavors are layered and frozen to make these delicious patriotic adult popsicles.  We’ll take two!

Who loves popsicles?  We are raising our hands really high over here.  We think they are one of those desserts that you never really outgrow.  Apparently, alot of folks agree with us, because we know of several local gourmet popsicle businesses that have popped up in the past few years that do gangbuster business.  They are a huge hit at festivals and concerts they offer heavenly flavors combinations that appeal to all ages.

 

When researching some dessert ideas for summer festivities, we came across this amazing recipe for Boozy Red, White and Blueberry Cheesecake Popsicles that not only combines 3 amazing pop flavors, but also adds a little adult treat into the mix.  The other bonus is that they are red, white and blue, making them perfect for Memorial Day, July 4th, Flag Day…or any other time you are feeling rather grateful to be an American.

These can also be made without the Rumchata, using milk as a substitute.  Either way, they look amazing and we love Host the Toast for sharing all of her inventive pop ideas!

Whip up these Patriotic Adult Popsicles For Your Summer Soiree!

FOR THE SIMPLE SYRUP:

  • 1/2 cup sugar
  • 1/2 cup water

FOR THE STRAWBERRY LAYER:

  • 1 1/4 cups strawberries, hulled and chopped
  • 1/4 cup simple syrup
  • 2 tablespoons Rumchata (or Bailey’s, or milk)

FOR THE BLUEBERRY LAYER:

  • 1 1/4 cups blueberries
  • 1/4 cup simple syrup
  • 2 tablespoons Rumchata (or Bailey’s, or milk)

FOR THE CHEESECAKE LAYER:

  • 6 oz cream cheese, softened
  • 3/4 cup sweetened condensed milk
  • 1/3 cup Rumchata (or Bailey’s, or milk)
  • 4 graham crackers, crushed into crumbs

YOU WILL ALSO NEED:

  • 10 3 oz paper cups
  • 10 wooden craft sticks
