Easy And Quick Lasagna Soup Puts Your Favorite Italian Casserole In A Bowl

Love lasagna but hate all the prep?  Lasagna Soup brings all the same delicious ingredients together, but much quicker and simpler than the traditional baked version.

Ok, this recipe might have to go in the weekly menu list.  If you have a busy household and simply don’t have time to bake a lasagna from scratch, this one may be a winner.  I have a friend who works and is raising 3 active kids and she absolutely swears by this dish as a quick and easy crowd pleaser.

Here’s your grocery list:
  • 1 Tbsp of Olive Oil
  • 1 Onion, chopped
  • 3 Cloves of Garlic, minced
  • 1 lb of Ground Beef
  • 14 oz can of Diced Tomatoes
  • 14 oz can of Tomato Sauce
  • 7 cups of Beef Stock
  • 1 Tbsp of Italian Seasoning
  • 1/2 cup of Freshly Grated Parmiggiano
  • 8 oz of Lasagna noodles, broken up into small pieces
  • 1/2 cup of Ricotta
  • Fresh Basil
  • Shredded Mozzarella, optional
  • Salt and pepper to taste
