Back To Basics With The Perfect Chicken Cutlet

There are certain recipes that everyone needs in their arsenal.  Master the perfect chicken cutlet and conquer dinner every time.

In the effort to “wow”, chefs continue to make recipes more and more exotic and complicated.  But if you look closely, you will see that more often than not, the best dishes start with classic techniques.  It holds true with with pretty much anything.  If the foundation is strong, everything else is just gravy.

Such is the case with learning basic recipes and cooking techniques.  If you know how to pull off a basic gravy, or cookie or roasting technique, you should be able to make wonderful variations on dishes using those same recipes and methods.

Bon Appetit is helping home cooks everywhere by teaching a classic technique for chicken cutlets.  Their recipe uses panko bread crumbs and dried mustard for guaranteed crunch and flavor.  These cutlets can certainly stand on their own, or can be the basis for any number of other dishes.   Our mouths are watering thinking of these over a plate of angel hair pasta, lemon juice and herbs.   If you don’t already have this dish mastered, give this recipe a try.  You may just have a new go-to chicken dish that will stand the test of time!
