The Duke didn’t create this recipe, but he regarded it as one of his favorites.  Now John Wayne Casserole has his name on it and fans galore.

 

 

Every once in awhile a recipe takes on a life of its own.  That’s what happened with this cheese casserole.  Back in the 70’s, a 10 year old California girl decided to put together a celebrity recipe book to benefit the American Cancer Society.  She had had several relatives contract cancer and she wanted to raise money for research.  Her Mom helped her send letters to various celebrities, asking for their favorite recipes.  This cheese, chile and tomato bake is what she got from John Wayne.

Since the publishing of her book, this recipe has become a mainstay in homes across the country.  Many people have created their own versions, adding beef, mushrooms and pretty much anything else that sounds good with cheese.  You have probably had some version of this at some point in your life.  How about reviving this dish and giving it a second look?  I Thee Cook brings you the details and her slight variation on the dish.  We are certainly adding it to our meal plan!

 

 

John Wayne Casserole is easy to make with just a few common ingredients.  This version adds mushrooms.

  • 2 cans (4-oz size) diced green chiles, drained
  • 1 teaspoon butter
  • 1/2 pint sliced mushrooms (optional)
  • 1 lb Monterey Jack cheese, coarsely grated
  • 1 lb Cheddar cheese, coarsely grated
  • 4 egg whites
  • 4 egg yolks
  • 2/3 cup canned evaporated milk
  • 1 tablespoon flour
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper
  • 2 medium tomatoes, sliced
