What do you consider to be perfect chocolate chip cookies?  Thin and crispy or soft and chewy?  This kitchen test shows how to master your perfect cookie recipe.

 

I don’t know about you, but cookies are kind of a mystery to me.  I can bake a cake, but I have no concept of what makes cookies turn out the way they do.  And I think that the best cookies are the ones that you, personally, love.  If you prefer flat and crunchy, then that calls for one recipe.  Fluffy and chewy with a touch of butterscotch flavor calls for a different recipe. Ultimately, the cookies are all up to you.

That’s why we are so grateful for this baking test done by Handle the Heat.  She establishes a control recipe and then varies several of the ingredients to see what kinds of results each batch produces.  Thanks to her tests, I finally feel like I have a little better grasp on the science behind the cookie.  Judging from her results, I think I might be a “both” kind of girl, but let’s not kid ourselves.  At the end of the day, any cookie will do me just fine.  What’s your favorite?
