Hootie & the Blowfish front man Darius Rucker has had a brilliant second career as a solo country singer! Below is Darius’s favorite Christmas recipe for his family’s Okra Soup, adapted from the new book Country Faith Christmas.
1 package frozen cut okra
1 large can tomato sauce
1 package frozen whole kernel corn
1 package frozen green Lima beans
You may use smoked neck bones or a ham bone (purchase from honey ham store). Canned lima beans and corn may also be used.
First boil meat for 30 to 45 minutes.
If using frozen corn and lima beans, add to pot with tomato sauce, boil for 20 minutes.
Add okra, season with salt and pepper and pinch or sugar to taste.
Make sure to let meat boil down to low liquid, do not drain. If using canned corn and Lima beans be sure to drain before adding to pot. If you want, add pound of fresh shrimp and simmer 15 minutes.
Serve over white rice.
