Raindrops on roses and wine in cupcakes? Sounds good to us! Whip up some Sangria Cupcakes for two favorites in one!
No matter what time of year, cupcakes are always a great go-to dessert. We think what makes them so popular is their portability, but most especially, their versatility! The sky is the limit on flavor combinations, and because they are smaller portions, you can try several flavors without feeling too terribly guilty. Right?;) Go with me on this one.
Imagine our delight when we discovered yet another scrumptious cupcake recipe that brings our favorite flavors together! This one, however, is rated adults only as it contains our beloved fruity wine concoction, Sangria! Beth, at The First Year, has brought us a lovely recipe that combines a moist vanilla cake, enhanced with berries, orange and apples with a decadent wine reduction buttercream topping. Oh my! I am ready to put my apron on and get to some cupcaking! I might even pour a glass to enjoy while I’m at it. Why not, right? Cheers!
You’ll need the following to make these decadent Sangria Cupcakes:
- 1 & 1/2 cups flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 3/4 cup sugar
- 2 eggs
- 1 stick butter, melted
- 1 & 1/2 tsp vanilla
- 1/2 cup sour cream
- 1/2 cup chopped strawberries, or a little less
- zest of 1 orange
- 1/4 cup blueberries or diced apples
TO TOP THE CUPCAKES
- Orange slices, strawberry slices and blueberries.
- 1 stick butter, room temperature
- 1/2 cup vegetable shortening
- 2-2.5 cups powdered sugar
- 1/2 tsp vanilla
- 2 cups red wine and 1/4 cup sugar, reduced to red wine syrup
