Cheater’s Recipe For Chicken Broccoli Soup With Cheese Dumplings

So few of us have time to cook from scratch anymore.  But we still want that homemade taste and the satisfaction of knowing that something at least kind of authentic is a-cookin’.  That’s where semi-homemade recipes come in handy.  Your recipe includes many fresh or scratch ingredients, but the most time consuming parts come from grocery convenience items.  Products like rotisserie chicken, canned soups and Bisquick can save supper and they are the un-sung stars in this one-pot soup recipe.

This Chicken Broccoli Soup comes together in no time, thanks to some clever ingredient cheats!

Soup
  • 2 cans cream of chicken soup
  • 2 cups milk (or two cans of milk)
  • 2 cups chicken broth
  • 1 1/2 cups shredded rotisserie chicken
  • 1 Tablespoon dried onion flakes
  • 1/2 cup diced celery
  • 1/4 cup finely shredded carrots
  • 1 – 14 oz. bag frozen broccoli florets
  • Salt and Pepper to taste.
Dumplings
  • 2 cups Bisquick
  • 1/2 cup milk
  • 1/2 cup shredded Cheddar cheese, divided in half
