I’m not the world’s greatest cook by any stretch of my imagination…so I readily accept help from any source available! And when it comes to cooking vegetables…I tend to fall into a pathetic ‘canned’ rut from time to time. BUT these (7) fresh veggie recipes have me very excited! I can so make these… and so can you! Juice of 3 limes (about 1/4 cup)
1/4 cup extra virgin olive oil
2 garlic cloves, roughly chopped
1/4 cup cilantro leaves
1/2 teaspoon salt
1/2 teaspoon cayenne
1/4 teaspoon sugar
Lime wedges, to serve
1 head green cabbage
Canola oil

1/2 cup blanched and slivered almonds
6 tablespoons extra virgin olive oil, divided
1 garlic clove, minced
1/2 cup breadcrumbs
Zest and juice of 1 lemon

Flaky sea salt
Pepper
1 1/2 pounds green beans, trimmed

8 ounces brussels sprouts, trimmed and halved lengthwise
1 medium sweet potato (about 8 ounces), peeled, cut in 1/2-inch cubes
1 medium head of cauliflower (about 1 1/2 pounds), cut into bite-size pieces
1 tablespoon vegetable oil
1/4 teaspoon salt
2 tablespoons lime juice
1 1/2 teaspoons yellow miso paste
2 tablespoons walnut oil

This (4) ingredient recipe could NOT get any easier!! WOW – I can’t wait to make this for my kids! They’re gonna love the spicy taste and won’t even realize they are eating a vegetable!

All you need is: 

1 sweet potato per person (preferably ones that are shaped long and skinny)
1 Tablespoon olive oil
kosher salt
chili powder
