As of late, fried pickle chips have become a staple on many restaurant starter menus.  They are tangy, crunchy, spicy and savory and typically served with a cooling dip to help balance the flavors.  The downside is that fried pickles, by virtue of the cooking method, are loaded with calories.  Enter A Spicy Perspective and their fantastic recipe for a baked version of these delightful treats.  The trick is to add some low-fat cheese into the mix for flavor and then to spray with cooking spray to help them get crispy.  The dip is even slimmed down with the use of Greek yogurt.  These are great for get-togethers or even as nighttime snack.  Enjoy!

 

 

Here’s what you will need to make Baked Fried Pickles:

For the Oven Baked “Fried” Pickles:

  • 16 ounce dill pickle slices, drained
  • 1/2 cup all purpose flour
  • 1 large egg
  • 2 tablespoons milk
  • 1 cup panko bread crumbs
  • 3/4 cup finely shredded reduced fat pepper jack cheese (or habanero cheddar)
  • Cooking oil spray

For the Garlic Sauce:

  • 1 cup low fat plain greek yogurt
  • 1 tablespoon minced garlic (3-4 cloves)
  • 1 tablespoon fresh chopped dill
  • 1 tablespoon honey
  • Salt and pepper
